Turkey wraps

I hate to waste food and sometimes don't necessarily want to eat the lefties in my fridge.  Two nights ago I made turkey burgers and garlic fries.  Well, the fries were gone and I wasn't in the mood for a burger again, so today I made turkey wraps instead.  

To make them, all you need is some already cooked burgers or you can season the ground turkey meat however you like and make them from scratch.  To make my burgers from scratch, I chop one small onion, 1/2 green pepper, 5 cloves of garlic and a handful of fresh flat parsley.  I mix the veggies with the ground turkey and add salt and pepper and some worchestire sauce and let it marinate for about an hour.  Then I put them on the grill.

Anyway, back to the already cooked burgers. I heat up my cast iron skillet and add enough oil to coat the pan.  Once its hot enough, I throw in the burgers and chop them up in the skillet and heat the meat.  Once the food is hot, I turn off the flame and separate the meat into individual portions in the skillet and add 1/2 slice of cheese (I used pepperjack) or you could have it sans cheese, and I cover the skillet.

Meanwhile, I turn on a different flame on the stove ( I don't really know if you can do this with an electric stovetop) and I place my tortilla on it and flip it after about 20-30 seconds to warm it up.

I then place my tortilla on my plate, I add sliced tomatoes, raw spinach, avocado slices and finally, the ground turkey.  I also like to add some ketchup and voila, you've got another yummy meal!

What we're reading

I love to read but definitely don't set aside enough time for it.  I am trying to change that.  So every so often I will try to post what books are being read in my house.

It's a story about an African couple who are apart and rekindle their relationship.  I just started it and so far it has rekindled my love with reading!

It's a survival story for tweens about going to sleepaway camp.  My eleven year old loves this series!

Her absolute favorite book.  She requests it every night and has started to memorize it and yells out words during certain parts!

Baby #3!!!!!!


I am so excited to say that we have another little one on the way!  I am over halfway there and can definitely say I have felt so much more, so much sooner the third time around.
That's partially been the reason why I haven't been posting as much.  In the beginning I felt like CRAP! And, now at 25 weeks, I am exhausted.  I guess its a mixture of being older, having more responsibilities and mainy having a one year old. Either way, life goes on and I have just slowed down my activities.
I have had so much on my mind recently with planning and anxiety about having 2 in diapers and how I will handle the new responsibilities.  I know millions of women do it but for me its hard to imagine how until I am in the thick of it!  I just keep telling myself to resign my brain to the idea that I will be kind of crazy for the next 2-3 years! Ha!

A much needed rest

Hey there! I was in dire need of some rest from everything.  So, I haven't been posting, or picking up much time at work and have just been focusing on my family.  Since my last post much has happened.  I lost my mother in law to cancer.  That has got to be one of the most devastating, aggressive diseases out there.  This is the second family member I have watched be taken by this disease and no matter how often you experience it, nothing quite prepares you for the end.
I had a birthday, which in spite of what was going on, we still had an enjoyable dinner.  My husband seemed to enjoy doing something nice to get his mind off of things.  I was also the Matron of Honor at my sister's wedding, took a trip Down South with my husband(post coming soon)and enjoyed Thanksgiving with almost all of my family except for one brother (that's a first for us since everyone is so spread out.)
I wish I could say I read some great books and did some cleaning out of things or took a class, but the truth is I just did the mundane day to day activities and vegged out in front of the TV and took naps in the middle of the day, which is great, by the way.  I think I have had my fill for the most part and am ready for some new activities, which means....New Posts!

So, enough about me...what have you all been up to?

New projects, New me



Reading all these other blogs has made me realize I need to start taking advantage of my time and take on some new projects.  Things I have been putting off learning how to do for a variety of reasons/excuses/laziness!  Things that are purely selfish....but in an indirect way will be enjoyed by everyone.

The first is sewing.  My mother and sister both know how to sew and my mom used to make her own clothing.  I am so jealous, I can't even hem a pair of pants.  It's really bad!  I was able to mend my son's pants and sew on some patches but I mean  really sewing with a machine and patterns (I think that's what they're called).  Luckily, for me, my sister gave me a sewing machine last year.  My girlfriend mentioned that Joanne's has a class and guess who's signing up?!  I will have to let you know how that goes.

Next up is photography.  I truly enjoy looking at images and took a photography class in high school.  It was so cool developing the film and learning how to get the shot that I wanted.  However, priorities changed and truthfully I didn't focus enough on it to be as good as I believe I can be.  So, thanks to my birthday present from my awesome hubby about 5 years ago, I will be getting lots of practice in with my Nikon D50.  Obviously, a class would be helpful but I don't have the time and I think just getting out and shooting will do wonders.

Lastly, and this is the biggest task is redesigning our home.  I am a late bloomer in the self-discovery area.  It has taken me a long time to be cool with myself and not be so concerned with what others think about what I am doing, or wearing or whom I'm hanging with.  I mention that because I think that your home should represent who you are as an individual and I don't feel that mine does.  Mostly, because I am still figuring out who I am, what I like, my interests and taking time to learn new crafts.  So, this project will be ongoing.  But, occasionally I will post little changes we make!

Autumn


I'm back!  I got exceptionally busy the past few weeks and am finally starting to slow down and realized I haven't made a post in 3 weeks!  Anyway, we are officially in one of my favorite seasons.  I had my first pumpkin spice latte, ummmmhhhhh, what a treat!  Soccer season has started.  We visited a farm and got some caramel corn, gourds and Indian corn.  I got my fall decor, mums and pumpkins and finally rocked a pair of boots!
